Heat treatment: accelerates the process of chemical digestion, improves the digestibility of vegetables and their nutritional value.

Heat treatment of tomatoes, for example, increases the amount of lycopene they contain. Taking lycopene reduces the risk of myocardial infarction or cancer.


How not to lose vitamins

During the heat treatment, however, important vitamins and minerals can be destroyed. These include, in particular, sodium, potassium, magnesium, calcium, vitamin C, B-vitamins, and fat-soluble vitamins, ie A, D, E, K.

So how to relieve digestion and not to lose precious nutrients at the same time?
The results of the research show that the content of vitamins in food affects least the baking of dry or small amounts of oil or steaming and steam cooking.
Nutritional value of food does not greatly reduce even short-term heating in the microwave oven. On the contrary, cooking in foods significantly reduces the content of vitamin C and vitamins of the B series. However, this method of heat treatment does not have a significant impact on the amount of omega-3 fatty acids.
The favorite barbecue reduces primarily the B-series vitamins. It can also promote tumor growth as it creates cancer-forming polycyclic aromatic hydrocarbons.

What then to eat?

So the answer to the seemingly simple question, "hot or cold?" Is by no means unambiguous. Heat treatment of dishes has its for and against, as well as consumption of raw and cold food.

In general, heat treatment should be sufficiently gentle to maintain the maximum biological value of the food. This concerns the content of vitamins, minerals, essential fatty acids and amino acids. If you also have difficulty digesting raw vegetables, do not worry about its heat treatment.
